In Ferment 9 we combine ancient and innovative fermentation techniques with traditional and modern flavors and ingredients. By doing so, we get food and drinks that we consider as delicious as they are nutritious.

WHAT IS FERMENTATION?

Fermentation is an ancient technique used to transform and preserve multiple types of food and beverages. Therefore, fermented foods not only last a long time, but are thought to have more bioavailable nutrients and are more digestive than raw or cooked foods. Since microbes have destroyed cell walls and decomposed (digested) much of what nature had left locked up, this statement makes a lot of sense. Fermentation could have many more benefits than could soon be scientifically demonstrated in the EU, and when the EFSA (European Food Safety Authority) establishes it, we will inform you about it. Fermentation has also been used around the world for millennia by virtually all cultures.

Lactic acid bacteria (BAL), which lead to the fermentation of different substrates, are prehistoric and are present in all fruits, vegetables, raw milk, etc.; practically everywhere, including humans. With the absence of oxygen, essential for the elimination of molds and dangerous yeasts, lactic acid bacteria begin to metabolize any organic substrate and produce antimicrobial and antipathogenic substances. Especially lactic acid, which produces an environment with an intolerable pH for unwanted microbes.

There are also molds and yeasts that not only ferment, but are essential for the fermentation of products such as alcohol, kombucha, kefir, bread or cheese, and that bring greater depth to the flavors of these products.
