In this workshop we will dive in the fermentation principles, it ́s role and impact in our intestinal health, and why we consider fermentation as a tool to harvest time in the kitchen.
It will be a hands on class preparing Chucrut and Kefirkraut. The difference between using salt or not, and the importance in the balance of minerals, vitamins and nutrients in our body.
Matías is a doctor with a functional and integrative medicine orientation from Argentina, permaculturist, cook, educator and founder on the non profit organization LA ́PAI.
